Instructions
- Dice the white potatoes into evenly sized cubes for even cooking.
- Optional for crispiness, place the white potatoes in a pot of salted water and boil for 5–6 minutes. Drain and let dry.
- Heat olive oil in a large skillet over medium heat. Add the white potatoes and cook for 10–12 minutes, stirring occasionally, until golden and crispy on the outside.
- Stir in the diced onion and bell pepper. Cook for 4–5 minutes until softened.
- Add garlic, chili powder, smoked paprika, cumin, salt, and pepper. Stir to coat the white potatoes evenly with the spices.
- Remove from heat and squeeze fresh lime juice over the potatoes. Toss gently.
