  • 1 ½ lbs white potatoes, diced into small cubes 
  • 2 tablespoons olive oil 
  • 1/2 small onion, diced 
  • 1 red bell pepper, diced 
  • 2 cloves garlic, minced 
  • 1 teaspoon chili powder 
  • 1/2 teaspoon smoked paprika 
  • 1/2 teaspoon cumin 
  • 1/2 teaspoon salt 
  • 1/4 teaspoon black pepper 
  • Juice of 1 lime 
  • 2 tablespoons fresh cilantro, chopped

Instructions

  • Dice the white potatoes into evenly sized cubes for even cooking. 
  • Optional for crispiness, place the white potatoes in a pot of salted water and boil for 5–6 minutes. Drain and let dry. 
  • Heat olive oil in a large skillet over medium heat. Add the white potatoes and cook for 10–12 minutes, stirring occasionally, until golden and crispy on the outside. 
  • Stir in the diced onion and bell pepper. Cook for 4–5 minutes until softened. 
  • Add garlic, chili powder, smoked paprika, cumin, salt, and pepper. Stir to coat the white potatoes evenly with the spices. 
  • Remove from heat and squeeze fresh lime juice over the potatoes. Toss gently. 
  • Top with chopped cilantro and serve warm.

  • White potatoes hold their shape well, making them ideal for skillet dishes. 
  • Serve with fried eggs for breakfast or alongside tacos for a full meal.
