  • 2 lbs white potatoes, peeled and sliced into rounds or half-moons

  • 1/2 large onion, sliced
  • 3 cloves garlic, thinly sliced

Instructions

  • Slice the white potatoes into even rounds or half-moons for consistent cooking. 
  • Place the white potatoes in a pot of salted water and boil for 6–8 minutes until just tender but not fully cooked. Drain and set aside. 
  • Heat olive oil in a large skillet over medium heat. Add the sliced onion and cook for 4–5 minutes until softened. 
  • Stir in the sliced garlic and cook for 1–2 minutes until fragrant. 
  • Add the par-cooked white potatoes to the skillet. Cook for 10–12 minutes, stirring occasionally, until lightly golden and tender. 
  • Sprinkle paprika, cumin, salt, and black pepper over the white potatoes and toss to coat evenly. 
  • Remove from heat, squeeze fresh lemon or lime juice over the top, and garnish with chopped herbs.

  • For extra flavor, add sliced chorizo or roasted peppers.
